What You Need:
- 500g ripe bananas (about 4 large bananas)
- 2 cups millet (to make flour)
- 2 tsp baking powder
- ½ tsp baking soda
- 1½ tsp cinnamon
- ½ cup coconut sugar
- ⅓ cup psyllium husks
- ¾ tsp salt
- 2 tsp vanilla extract
- 1 tbsp apple cider vinegar (or any light vinegar)
- 1¼ cups water
How to Make It:
- Preheat the oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- Make millet flour: Blend the millet in a blender or food processor until it turns into fine flour.
- Mash bananas: Peel and mash the bananas in a bowl until smooth.
- Mix dry ingredients: In a large bowl, mix together:
- Millet flour
- Baking powder & baking soda
- Cinnamon
- Coconut sugar
- Psyllium husks
- Salt
- Mix wet ingredients: In another bowl, mix:
- Mashed bananas
- Vanilla extract
- Vinegar
- Water
- Combine everything: Add the wet ingredients to the dry ingredients. Stir well and let it sit for 5-10 minutes to thicken.
- Bake: Pour the batter into the loaf pan. Bake for 50-60 minutes until a toothpick in the center comes out clean.
- Cool & enjoy: Let the bread cool for 10 minutes in the pan, then transfer it to a rack to cool completely.
