Guwahati’s café scene is expanding, but healthy food options are still limited. A new café, True Ritual, is trying to change this by introducing a concept based on millets, natural ingredients, and mindful eating.

The idea came from a personal health journey. One of the founders had to switch to a gluten-free and refined sugar-free diet due to PCOS. While it was possible to follow this diet at home, finding similar food outside was difficult. This led to the creation of a café where people can enjoy food that is both healthy and tasty.

True Ritual uses millet-based ingredients instead of refined flour and avoids processed sugar. The aim is to show that healthy food can still be delicious and satisfying.

Millets are the main highlight of the menu. These grains are rich in nutrients, high in fibre, and naturally gluten-free. The café presents them in a modern way, making traditional ingredients more appealing to today’s customers.

However, introducing such food habits is not easy. Many people are used to regular bakery items made with sugar and wheat. The café also takes the effort to explain the benefits of millets and help customers get used to new flavours and textures.

The pricing is slightly higher because of the quality of ingredients and the effort involved in preparation. Still, customers who try the food often appreciate its health value.

Working with millets also required a lot of experimentation. Since they behave differently from wheat, achieving the right texture and taste took time and effort.

Despite the challenges, the cafe is receiving a good response. With growing awareness about health, more people are open to trying better food choices. This could lead to more such mindful cafés in the future.
