Millet Prawn Biryani: The Perfect Blend of Protein and Fiber

 

Ingredients:

  • 1 cup millet (Any variety)
  • 250g prawns (cleaned)
  • 2 onions (sliced)
  • 2 tomatoes (chopped)
  • 2 tbsp oil or ghee
  • 1/2 cup curd (yogurt)
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • 1 tsp biryani masala
  • 1 tbsp ginger-garlic paste
  • Fresh coriander and mint leaves
  • Salt to taste

Method:

  1. Cook the Millet: Rinse and cook millet in 2 cups of water with a pinch of salt. Fluff and set aside.
  2. Marinate the Prawns: Mix prawns with ghee, turmeric, chili powder, garam masala, and salt. Let it rest for 20 minutes.
  3. Prepare the Masala: Heat oil in a pan, sauté onions until golden. Add ginger-garlic paste, tomatoes, curd, and spices. Cook for 5 minutes.
  4. Cook the Prawns: Add marinated prawns and cook for 5-7 minutes until tender.
  5. Assemble the Biryani: Layer cooked millet over the prawn masala. Sprinkle coriander and mint leaves. Cover and cook for 5 minutes.
  6. Serve: Enjoy with raita or salad.
