Millet Uttappam Recipe: A Nutritious Twist on the Classic! 

 

Uttappam is a traditional South Indian dish, typically made with fermented rice and lentils, but today we’re giving it a healthy upgrade by using millets! This millet uttappam is not only delicious but also packed with fiber and nutrients, making it a great choice for a wholesome breakfast or snack.

Ingredients:

  • 1 cup millet flour (you can use any millet like foxtail, little, or pearl millet)

  • 1/2 cup rice flour (optional, for a crispier texture)

  • 1/4 cup grated carrots

  • 1/4 cup finely chopped onions

  • 1/4 cup chopped tomatoes

  • 1/4 cup chopped bell peppers

  • 1-2 green chilies (finely chopped)

  • 1 tsp cumin seeds

  • 1/2 tsp mustard seeds

  • A pinch of hing (asafoetida)

  • Salt to taste

  • Water (to make a smooth batter)

  • Oil or ghee (for cooking)

Instructions:

  1. Prepare the Batter:

    • In a bowl, mix the millet flour and rice flour. Gradually add water and stir to make a smooth batter with a thick consistency, similar to pancake batter. Let the batter rest for about 20-30 minutes to allow the millet flour to absorb the water.

  2. Add Veggies:

    • Stir in the grated carrots, chopped onions, tomatoes, bell peppers, and green chilies into the batter. Add salt to taste.

  3. Temper the Spices:

    • Heat a little oil or ghee in a pan. Add cumin seeds, mustard seeds, and hing. Allow them to splutter and then pour this tempering into the batter, mixing it well.

  4. Cook the Uttappams:

    • Heat a non-stick tawa or griddle and lightly grease it with oil or ghee. Pour a ladle of the batter onto the tawa, spreading it slightly to form a thick pancake.

    • Cook on medium heat until the edges start to turn golden brown. Flip and cook the other side until crispy and golden.

  5. Serve:

    • Serve your millet uttappam hot with coconut chutney, tomato chutney, or sambar for an authentic South Indian experience!
