Millet pakodas are a tasty and nutritious snack, perfect for tea-time or as a party appetizer. Made with a combination of millet flour, gram flour, and flavorful spices, these crispy fritters are both delicious and healthy.

Ingredients

Millet Flour Options 

  • Finger millet (Ragi) flour
  • Barnyard millet flour
  • Pearl millet (Bajra) flour

Other Flours 

  • Gram flour (Besan) – Helps bind the batter
  • Rava (Semolina) or Maida – Adds extra crunch (optional)

Vegetables 

  • Onions
  • Green chilies
  • Ginger
  • Curry leaves
  • Coriander leaves
  • Carrot (optional)
  • Capsicum (optional)

Spices & Seasoning

  • Salt to taste
  • Red chili powder (optional)
  • Turmeric powder (optional)
  • Garam masala (optional)

Oil

  • For deep frying

Instructions

1. Prepare the Batter

  • In a mixing bowl, combine millet flour, gram flour, and any other flour you’re using.
  • Add the finely chopped vegetables and spices.
  • Mix well.
  • Gradually add water, a little at a time, to form a thick batter. It should hold its shape when dropped into the oil.

2. Heat the Oil

  • Heat oil in a deep pan or kadai over medium heat.

3. Fry the Pakodas

  • Once the oil is hot, carefully drop small portions of batter into the oil using your fingers or a spoon.
  • Fry until golden brown and crispy, turning occasionally for even cooking.
  • Remove using a slotted spoon and place on a paper towel to drain excess oil.

4. Serve & Enjoy

  • Serve hot with your favorite chutney or sauce.
