Guru Nanak Dev University (GNDU) in Amritsar is leading a new research project to bring more attention to millets as a healthy and eco-friendly food choice. Supported by the Indian Council of Social Science Research (ICSSR), the project aims to show how millets can be a better option than fast food. These traditional grains are not only good for our health but also help protect the environment by growing well in tough climate conditions.
To make millets more popular, the university is developing easy and tasty recipes that suit all age groups. They're also trying to give a new twist to fast food by using millets in familiar items like pizzas and burgers. The goal is to make millet-based meals fun, appealing, and quick to prepare, so more people will enjoy adding them to their diets.
At a recent event at GNDU, Chef Jaswinder Singh from Melbourne spoke about the importance of clean and safe food, especially in small food businesses across India. He stressed the need for better training and awareness to ensure high food quality. His ideas support the university’s mission—not just to promote millets, but to raise standards in how food is made and served.
