Ingredients

  • 1 cup sorghum grains
  • 1 cup grated jaggery
  • 1 tablespoon ghee
  • 1/4 teaspoon cardamom powder
  • A pinch of salt

Instructions

  1. Pop the Sorghum: Heat a deep, heavy-bottomed pan over medium heat. Add the sorghum grains, cover with a lid, and let them pop. Shake the pan occasionally to prevent burning. Once popped, set aside.
  2. Prepare the Jaggery Syrup: In another pan, melt the grated jaggery with a splash of water over low heat. Stir continuously until the syrup reaches a one-string consistency (a thin string forms when you stretch the syrup between your fingers).
  3. Mix and Shape: Combine the popped sorghum, jaggery syrup, cardamom powder, and a pinch of salt in a mixing bowl. Grease your hands with ghee and shape the warm mixture into small laddus.
  4. Cool and Serve: Let the laddus cool completely to firm up before serving.
