Easy Millet Banana Bread – Perfect for Breakfast or Snacks

 

What You Need:

  • 500g ripe bananas (about 4 large bananas)
  • 2 cups millet (to make flour)
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1½ tsp cinnamon
  • ½ cup coconut sugar
  • ⅓ cup psyllium husks
  • ¾ tsp salt
  • 2 tsp vanilla extract
  • 1 tbsp apple cider vinegar (or any light vinegar)
  • 1¼ cups water

How to Make It:

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. Make millet flour: Blend the millet in a blender or food processor until it turns into fine flour.
  3. Mash bananas: Peel and mash the bananas in a bowl until smooth.
  4. Mix dry ingredients: In a large bowl, mix together:
    • Millet flour
    • Baking powder & baking soda
    • Cinnamon
    • Coconut sugar
    • Psyllium husks
    • Salt
  5. Mix wet ingredients: In another bowl, mix:
    • Mashed bananas
    • Vanilla extract
    • Vinegar
    • Water
  6. Combine everything: Add the wet ingredients to the dry ingredients. Stir well and let it sit for 5-10 minutes to thicken.
  7. Bake: Pour the batter into the loaf pan. Bake for 50-60 minutes until a toothpick in the center comes out clean.
  8. Cool & enjoy: Let the bread cool for 10 minutes in the pan, then transfer it to a rack to cool completely.
