Easy Millet Banana Bread – Perfect for Breakfast or Snacks
What You Need:
500g ripe bananas
(about 4 large bananas)
2 cups millet
(to make flour)
2 tsp baking powder
½ tsp baking soda
1½ tsp cinnamon
½ cup coconut sugar
⅓ cup psyllium husks
¾ tsp salt
2 tsp vanilla extract
1 tbsp apple cider vinegar
(or any light vinegar)
1¼ cups water
How to Make It:
Preheat the oven
to
350°F (175°C)
. Grease a loaf pan or line it with parchment paper.
Make millet flour:
Blend the
millet
in a blender or food processor until it turns into fine flour.
Mash bananas:
Peel and mash the bananas in a bowl until smooth.
Mix dry ingredients:
In a large bowl, mix together:
Millet flour
Baking powder & baking soda
Cinnamon
Coconut sugar
Psyllium husks
Salt
Mix wet ingredients:
In another bowl, mix:
Mashed bananas
Vanilla extract
Vinegar
Water
Combine everything:
Add the wet ingredients to the dry ingredients. Stir well and let it sit for
5-10 minutes
to thicken.
Bake:
Pour the batter into the loaf pan. Bake for
50-60 minutes
until a toothpick in the center comes out clean.
Cool & enjoy:
Let the bread cool for
10 minutes
in the pan, then transfer it to a rack to cool completely.
