Ingredients:
For the Cake:
1 cup finger millet (ragi) flour (or any millet flour)
1/2 cup jaggery (adjust to taste)
1/4 cup melted butter
1/2 cup almond milk
1/4 cup mixed nuts (almonds, walnuts, pistachios), finely chopped
1/4 cup dried fruits (raisins, cranberries, apricots), chopped
1/4 teaspoon nutmeg powder
1/2 teaspoon cinnamon powder
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon baking soda
Pinch of salt
For the Garnish:
Fresh berries (strawberries, blueberries)
A handful of chopped nuts and seeds
Instructions:
Preheat: Preheat your oven to 180°C (350°F). Grease a 7-inch round cake pan and line with parchment paper.
Combine Dry Ingredients: In a large bowl, whisk together millet flour, jaggery, baking powder, baking soda, cinnamon, nutmeg, and salt.
Mix Wet Ingredients: In a separate bowl, combine melted butter, almond milk, and vanilla extract.
Combine Wet and Dry: Gradually add the wet ingredients to the dry mixture, stirring gently until a smooth batter forms. Fold in the chopped nuts and dried fruits.
Bake: Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.Let the cake cool completely before removing it from the pan. Decorate with fresh berries, nuts, and seeds.
