Preparation Method
1. Cook the Millet
Rinse the millet thoroughly. Boil in a 1:2.5 ratio of water until soft but not mushy. Spread on a plate to cool completely.
2. Sauté the Masala
Heat oil in a pan. Add mustard and cumin seeds. When they splutter, add onions, green chili, and ginger-garlic paste. Sauté until golden brown.
3. Add Veggies and Spices
Stir in the tomatoes and cook until they soften. Add chopped vegetables along with turmeric, chili powder, garam masala, and salt. Cook until vegetables are tender but slightly crisp.
4. Mix in the Millet
Add the cooled millet to the masala mix. Gently stir to coat the grains evenly. Cook on low heat for 2–3 minutes to blend flavors.
5. Garnish and Serve
Turn off the heat. Sprinkle with chopped coriander and a dash of lemon juice. Serve hot with curd, raita, or as a stand-alone meal.
